Chocolate Brownie Recipe
how to make rich chocolate brownies

My aim is to give you a basic brownies recipe then show you how you can use it to make endless variations.
You will quickly see that these brownies are over the top, filled with chocolate chips, nuts, fruits etc but best of all they fullfil the needs of choc-o-holics and brownie-o-holics alike!
One thing that I do that is different to others is that I bake my brownies in muffin or patty cake pans. The reason I do this is
my chocolate brownies are so filled with goodies that they are impossible to cut cleanly. - it gives me even portions.
- and if I also use paper liners it is impossible for them to stick.
- it improves their presentation especially if they are for a gift.

Chocolate Brownie Recipe
Makes 24 brownies.
I have used two patty cake pans with a 1/4 cup (water) capacity. Generously spray with non-stick baking spray or line with paper cases. Larger muffin pans can be used just be aware that you will make less brownies and need to bake them a little longer.

Ingredients.
125g butter, chopped250g dark chocolate, chopped
1/2 cup brown sugar, firmly packed
2 eggs, lightly beaten,
1 1/4 cups plain flour, sifted
2 cups chocolate chips, see recipes below for other suggestions
Baking Temperature
The oven should be preheated to 160oC (325oF)Method.
- In a medium size microwave safe bowl heat the chopped butter and dark chocolate on high for 1 minute. Remove and stir until blended. You may need a further 30 seconds. Stir until smooth. Cool slightly so that you do not cook the eggs when you add them.
- Add the brown sugar and the beaten eggs. Stir through.
- Add the sifted flour and stir through until smooth.
- Divide the brownie batter evenly into the patty cake pans. Using a small icecream scoop makes this quick and easy.
- Evenly divide the chocolate chips and press lightly into the top of the batter. Don't be suprised by how many there are I have been very generous but then again I really love rich chocolate brownies. The reason I do not mix the chocolate chips into the batter is that this way you can instantly see what type of brownie you are eating increasing their WOW! factor.
- Bake in a preheated oven set to 160oC (325oF) for 22 minutes.
- Remove from the oven and leave to cool in the tin for 10 minutes before removing to a cake rack to cool completely. If you have not use paper liners take great care, I usually use a flat knife to help lift them out.
- Store in an airtight container for one week. The brownies can be frozen for up to two months.

Chocolate Nut Brownies
Include your favourite nuts in the chocolate brownie recipe base. I have made Chocolate Walnut Bronwies. Instead of using 2 cups of chocolate chips I used 1 cup milk chocolate chips and 1 cup chopped walnuts. I mixed them together then lightly pressed then into the top of the brownie batter.
Macadamias, hazelnuts, pecans and almonds all work well. If you really love nuts then leave the chocolate chips out and use 2 cups of nuts.
Even a mix of different nuts would work well. These brownies were baked in paper cases.
White Chocolate Brownies
White chocolate contrasts beautifully with the rich dark chocolate in the batter.
You could use 2 cups of white chocolate chips or chopped white chocolate (in this case they would be called white chocolate chunk brownies).
Or as I have use 1 cup of white chocolate chips and 1 cup of chopped macadamia nuts. These white chocolate macadamia brownies were baked without paper liners.
Triple Chocolate Brownies, Chocolate Chip Brownies or Double Chocolate Brownies
All depend on the combinations of the chocolate chips used.
Just take 2 cups of chocolate chips and mix together in any combination of Milk, Dark and White chocolate chips and press lightly into the chocolate brownie recipe batter.
If you do not have chocolate chips then just chop your favourite chocolate into a similar size and call them chocolate chunk brownies.
Chocolate Mint Brownie Recipe
Well this is another delicious fudge brownie for you to make.
Whether you use hard peppermint candies or soft centered mints they are sure to be a hit. I have a favourite mint brownie recipe - chopped junior mints sprinkled on top as the brownies come out of the oven.
Absolute heaven if you eat them warm, all soft, fudgy, minty and of course rich and chocolatey.
Raspberry Fudge Brownies
Yes another twist on my chocolate brownie recipe. I have baked these in heart shaped silicon cake moulds that have just under a 1/2 cup capacity. It will make ten raspberry brownies. Do not use the 2 cups of chocolate chips, instead push three frozen raspberries into the top of each brownie.
Bake 160oC for 30mins. Raspberries and chocolate are perfect together. Leave to cool completely in the moulds.
Dust with icing sugar to serve.
Peanut Butter Brownies
Scrumptious chocolate peanut butter brownies recipe- smooth or crunchy you choose.
Another delicious chocolate fudge brownie. If you are a fan of crunchy peanut butter then you could also substitute half the chocolate chips in this recipe with 1/2 cup roasted chopped peanuts for extra crunch!
Cheesecake Brownie
I will warn you these cheescake browniesare the ultimate in fudge brownies.
I think it would be impossible for them to be any fudgier! Adding the cream cheese layer to the top stops any moisture escaping during baking.
Leaving a rich sinful chocolate fudge brownie with a smooth cheesecake top - heaven!
Christmas Holiday Brownies
What's christmas without holiday brownies? I have used 1 cup of dark chocolate chips with 1 cup of chopped red glace cherries pressed lightly into the brownie batter.
I have made them even more special by topping them with a rich chocolate glaze .
Use this glaze as your new favourite brownie icing. The recipe gives enough glaze to generously top 24 brownies. Decorate them with even more cherries or your favourite christmas sprinkles.

Chocolate Brownie Icecream
Once you make brownie ice-cream I know it will not be the last time.
This is my way and it is super easy. All I do is roughly chop my brownies and stir them through softened iceream - easy. Now you can eat it straight away or put back in the freezer.
Another thing I do is always have brownies stored in the freezer that way you can make this delicious icecream when ever you like.

This is just one great big chocolate brownie.

Hi!
Just wanted to say what a great idea it is to make browines in muffin tins,do you think
you could make them in mini muffin tins for a smaller portion

Hi Elke, yes it does work just as well in the mini muffin tins making them delicious bite sized brownies filled with chocolate. You will just need to reduce the baking time.
