Delicious Chocolate Truffle Filling

Chocolate Truffle Filling the names say it all. It's rich and chocolatey and makes an everyday chocolate cake sinful!

If you are making this filling to decorate a cake I recommend that you take the cake out of the refrigerator 30mins before serving. This way you can enjoy its smooth truffle texture and its rich chocolate flavour.

Chocolate Truffle Filling Recipe

This will give you enough chocolate cake filling to generously fill, top and coat an 8" chocolate cake.

Ingredients

90g unsalted butter, chopped coarsely
500g good quality dark chocolate, chopped coarsely
2/3 cup (80ml) thickened cream
2 teaspoons glucose syrup

Method

  1. Place the butter and chocolate in a medium sized microwave safe bowl.
  2. Microwave on medium power for 1minute. Stir then continue to microwave on medium power at 30sec intervals. Continue until chocolate has just melted. This should not take any more than 2-3 mins.
  3. Add the cream and glucose. Mix through until combined and smooth.
  4. Cover and leave to cool until it reaches a spreadable consistency. Then it is ready for use. Give the filling a good stir just before using. The outside of the bowl cools faster than the center and this will ensure the texture is even.

If you want to use this filling to pour over a cake then allow to cool until it just starts to thicken. You will have enough to give a thin first coat. Allow this to set then pour a second coat. This will ensure a perfect coating and a nice thick layer of chocolate truffle!
