Chocolate Candy Easter Cupcakes
The simplest way to decorate your chocolate cupcakes is to use any of the wonderful easter eggs and candy from the shops. Just decorate the tops of the cupcakes with my quick and easy frosting recipe. .
Choose your favourite mini easter eggs or characters. Choose colours that will match your easter party colours for this year. You may want to take any foil wrappings off if they are going to be eaten by small children.
Colour shredded coconut green to look like grass for your bunnies and chickens to sit on.
Chocolate Nest Cupcakes
It is easy to make these chocolate nest cupcakes.
All you need to do is melt 150g of chocolate and mix through 1 1/4 cups of shredded coconut. Use 1 tablespoon of the nest mix ontop of your cupcakes and make a small impression in the centre for the eggs to sit in. You can use any type of chocolate you like.
The key is to only half fill the cupcake bases with batter before baking this way the chocolate topping will sit nicely on top. Add your decorations to the nest before the chocolate sets to hold them in place.

Bunny and Egg Chocolate Cupcakes
This simple idea can be made weeks in advance. Using modelling paste or ready to roll icing these simple shapes can be made and decorated. I have used small bunny and egg shaped cutters. Actually I made the egg shape from a rose petal cutter. Dont forget to add a cute little cotton tail to the bunnies.
Leave them to dry on non-stick baking paper, then pack them between layers of the paper in an air-tight container.
The decorations are then ready to pop on your easter chocolate cupcakes on the day.
I have piped my chocolate glaze on top of the cupcakes. Make the glaze and leave to cool until spreadable. Beat until it thickens then fill a piping bag with a large star nozzle. My chocolate glaze recipe can be found here.
Chocolate Egg Easter Cupcakes
Yes these easter cupcakes do take a little more time but they are not difficult to make.
I have used "kinder suprise" chocolate eggs so that the children all had a little suprise waiting inside for them. Each chocolate cake also had their initial on it and I used them as place settings on the easter lunch table.
