Easy Chocolate Chip Cookies must be the world's favourite cookie. I know it's the one I make the most. I love baking chocolate chip cookies.

Now this is a really easy cookie recipe. As you will read I have given you a base recipe that tastes great and stores well. Then I have suggested variations to add variety.

  • The recipe makes 40 small cookies which is good as these chocolate chip cookies are so moorish I can never stop at one!
  • The recipe doubles easily making it perfect for cookie exchanges and school fetes.
  • The cookies freeze well and I hate to admit it but I have been known to eat them straight from the freezer in summer!
  • If you want to make double or triple chocolate cookies the use the double chocolate base recipe which simply has the addition of cocoa powder. This recipe can be found after my original base recipe.
  • Chocolate chips are the easiest to use as they are designed to hold their shape during baking. You can use while, milk, dark or all three!! Of course you can roughly chop you favourite chocolate and use that as well.
  • Try making Gourmet Easy Chocolate Chip Cookies. Roll double the quantity of dough into balls for baking. Then once cooled dip or drizzle more chocolate over the cookie. These make wonderful hostess gifts.
  • Don't just limit yourself to the addition of chocolate chips. Nuts and dried fruits are great and just as easy. You will find great ideas if you keep heading down the page.

Easy Chocolate Chip Cookies Recipe

Makes 40 Cookies.

Ingredients

125g butter, softened
1 cup white sugar
1/2 teaspoon baking powder
1/2 teaspoon bi-carb soda
1 teaspoon vanilla extract
1 egg
1 1/2 cups plain flour
1 1/2 cups chocolate chips

Baking Temperature

The oven should be preheated to 160C (325F)

Method

  1. In a large mixing bowl add the butter, sugar, baking powder, bi-carb soda and vanilla extract.
  2. On low speed beat until combined. Scrape the sides of the bowl down.
  3. Beat in the egg until combined and scrape down.
  4. Add the flour and chocolate chips and mix on low speed until just combined.
  5. Take slightly heaped teaspoonfuls of the cookie dough and roll into balls.
  6. Place on a baking tray that has been lightly coated with cooking spray or lined with baking paper.
  7. leave space between the balls as they will spread during baking.
  8. Bake in a preheated oven set to 160C (325F) for 10-12 minutes. The cookies are ready when they are a light golden colour.
  9. Remove from the oven and leave to cool on the baking tray for 5 minutes then transfer them to a cooling wire.
  10. The cookies will collapse slightly on cooling.
  11. Store in an airtight container for one week. The cookies can be frozen for up to two months.

Double Chocolate Cookie Recipe

Ingredients

125g butter, softened
1 cup white sugar
1/4 cup cocoa powder, sifted
1/2 teaspoon baking powder
1/2 teaspoon bi-carb soda
1 teaspoon vanilla extract
1 egg
1 1/4 cups plain flour
1 1/2 cups chocolate chips

Method

Follow the instructions for the Easy Chocolate Chip Cookies Base Recipe adding the cocoa powder with the butter, sugar, baking powder, bi-carb soda and vanilla extract.

White Chocolate Chip Cookies

Simply use white chocolate chips or roughly chopped white chocolate in the easy chocolate chip cookie recipe.

For some people white chocolate is the only chocolate and in cookies it is sweet and smooth.

These are so delicious.


White Chocolate Almond Cookies

  • substitute the vanilla extract in the base recipe with almond essence.
  • use 1 cup of the chocolate and add 1/2 cup of chopped almonds. You can substitute with any of your favourite nuts. White Chocolate Macadamia Cookies are my favourite.

In the photograph I made Gourmet White Chocolate Almond Cookies.

I used double the quantity of cookie dough rolled into balls and I baked them for 15-16 minutes. I also used chopped white chocolate instead of using chips to match the look of the chopped almonds. When the cookies cooled I then drizzled them with white chocolate.

Double Chocolate Chip Cookies

  • start with the chocolate base recipe and add your favourite chocolate chips.
  • why not make them triple chocolate and add two types of chocolate chips or dip the cooled cookie in melted chocolate. You can never have too much chocolate!
  • add some chopped glace or dried cherries with dark chocolate chips to the chocolate base recipe and you have Black Forest Cookies

White Chocolate Walnut Cookies

  • Use only 1 cup of the chocolate chips and add 1/2 cup of chopped walnuts.

In the photograph I made Gourmet Chocolate Walnut Cookies. I used double the quantity of cookie dough rolled into balls and I baked them for 15-16 minutes. When the cookies cooled I then drizzled them with dark chocolate.


Hot Cross Easter Chocolate Chip Cookies

Here's a couple of ideas to decorate your easy chocolate chip cookies for this Easter.

I have used an icecream scoop that holds one tablespoon of water to portion the dough. Make sure you leave room between the cookies on the tray because they will spread during baking. You will make 26 cookies and they will take 15 minutes to bake.

  • For the white chocolate chip I piped a dark chocolate cross across the top when they had cooled.
  • For the dark chocolate cookies I rolled thin strips of ready to roll marzipan and place them over the cookies before baking - easy. 250g of marzipan will be more than enough, you may even want to make a thicker cross.

I'm sure everyone will appreciate a basket filled with these hot cross cookies this Easter!

I have another suggestion to make these cookies even more like Easter hot cross buns - instead of the chocolate chips replace that quantity with a mixture of currants and chopped candied orange peel then use which ever cross you wish.
